Maple Roasted Pecans

Pecans are a powerhouse of nutrition and a tasty little snack.  They are rich in minerals, antioxidants, vitamins and among other benefits are great for healthy skin and hair!  I find they are filling too, perfect for a little afternoon snack to hold me off till dinner.  My six year old loves them but my three year old will only eat them like this...maple roasted.

Maple Roasted Pecans

Ingredients:

1 cup Pecans (unsalted, raw if available)

3 tbsp pure Maple Syrup

1/8 tsp Cinnamon

Preheat the oven to 275 degrees(f). Whisk syrup and cinnamon together in a small bowl.  Toss pecans in syrup mixture and pour out on to a foil or parchment lined baking sheet.  Roast in the oven for 6-7 minutes. Toss with a fork and roast and additional 3-4 minutes.  Allow to cool. They are delicious when still warm and sticky but as they cool they because a sweet and crunchy snack. They are yummy alone but also make a great topping for yogurt, chia pudding or oatmeal.
