These are an AWESOME healthy treat. They are perfect for breakfast or snack and can be customized with your favorite add-ins. They also make a great classroom treat as they do not contain eggs, nuts or dairy and if you use GF certified oats like we do than they are gluten-free as well. We make these in our culinary classes too and kid's love to make these... especially mashing the bananas.
Banana Oatmeal Cookies
Ingredients:
3 Ripe Bananas
1.5 cups Oats
1/3 cup Oat Flour
2 tbsp pure Honey or Maple Syrup
1/2 tsp pure Vanilla
2 pinch Cinnamon
¼ cup dried Fruit (like raisins or dried cranberries or blueberries)
¼ cup Chocolate Chips (we use enjoy life brand)
Preheat oven to 350 degrees (f). Mash the bananas very well. Add the oats, oat flour, honey or maple syrup, vanilla and cinnamon and whisk together. Fold in dried fruit and chocolate chips. Roll into balls and press flat into small circles on a parchment lined baking sheet - the dough will be sticky. Bake 15-20 minutes, until firm. Allow to cool a few minutes before serving. Store in an airtight container in the fridge.
