Banana Spinach Muffins
Ingredients:
1 cup fresh Spinach
2 RIPE Bananas
1/2 cup Coconut Flour
3 Eggs
2 tbsp Honey
1 tsp Baking powder
Preheat oven to 350 degrees(f). Line a muffin or mini muffin pan with paper liners (or grease well with coconut oil). Blend all of the ingredients except the baking powder in the blender till smooth. Add the baking powder and blend just till mixed in. Fill cups about 3/4 full. Bake for 15-20 minutes. Allow to cool. Store leftovers in an airtight container in the fridge. Makes about 10-12 muffins or 24 mini muffins.
