One of my favorite lunch time meals is this inviting salad. It doesn't even need dressing because the avocado and the vinegar emulsify nicely when you toss the salad. The flavor combination is great and it's a nutrition powerhouse. The cashews really take on a cheese like quality making this my favorite vegan salad!
Blackberry & Cashew "Cheese" Greens Salad
Ingredients:
1/2 cup raw Cashews, chopped
1- tbsp Apple Cider Vinegar
2-3 cups Fresh Chopped Greens
1/4 cup Blueberries
1/4 cup Blackberries
1 Avocado, cubed
2 tbsp sliced Cucumbers
1 tbsp Sunflower Seeds
Salt & Pepper
Soak the cashews in the vinegar for about 10 minutes, drain off most of the vinegar. Toss all of the ingredients together and season with a dash of salt and pepper. Serves two. Enjoy!
