This is an easy and beautiful jam that is the wonderful accompaniment to any breakfast, snack or PB & J. The vanilla and blackberry compliment each other nicely giving this jam the perfect balance of sweet, tart and smoothness.
Blackberry Vanilla Bean Jam
2 cups Blackberries, fresh or frozen (thawed)
1 tbsp Chia Seeds
2 tbsp Maple Syrup or Honey
1/4 tsp Cinnamon
1 Vanilla Bean, seeds
Using a fork or potato masher mash the ingredients together well. Add to a small saucepan over low heat and cook for 5-10 minutes, cool completely. Store in an airtight container for up to two weeks in the fridge or 3 months in the freezer. This jam is lovey on scones, toast, pancakes or graham crackers!
