Originally I had planned to call this recipe carrot granola bites but once my daughter got a taste she dubbed it carrot candy and that was that. It's perfect for a quick breakfast or snack on the go and works great packed in a lunch. It's so yummy it tastes like a treat but is packed full of healthy things. The girls loved helping me make these. They enjoyed rolling them into little bite size bits almost as much as eating them. Two words people - no bake!
Carrot Candy
Ingredients:
1/2 cup shredded Carrot
1/2 cup Almonds
1/2 cup Cashews
1/2 cup Dates (pitted)
1/2 cup Raisins
1/2 cup unsweetened Coconut (shredded)
2/3 cup Oats (I use Gluten-Free)
1 tbsp coconut oil (melted)
2 tsp pure Agave Nectar or Maple Syrup
Using a food processor combine all the ingredients until it has a soft but firm dough like consistency. Refrigerate for about 20 minutes. Roll them into little mini balls and store in an airtight container in the refrigerator for up to 2 weeks or freezer for up to 2 months.
