Well it's here...2017! A brand new year to start fresh with and paint the pages of our lives with color. Today I am sharing two awesome things for you, to help make your 2017 great. A healthy and yummy cookie recipe and my new favorite meal planner printable...
Chia Oatmeal Cookies
Ingredients:
1/2 cup Palm Shortening or Earth Balance, softened
1/4 cup organic Brown Sugar
2 Tbsp pure Maple Syrup
1 tsp Vanilla
1 Egg
3/4 Cup Gluten-Free Flour (or sub in 2/3 cup Whole Wheat Flour)
1/2 tsp Baking Powder
pinch Salt
1/2 tsp Cinnamon
1 1/2 cup Quick Cooking Oats (Be sure to use certified gluten-free if making GF)
1/4 cup Sliced Almonds or Sunflower Seeds
2 Tbsp Chia Seed
1/2 cup Raisins
1/4 cup White or Dark Chocolate Chips
Using an electric mixer beat shortening, sugar and maple syrup till fluffy. Add the vanilla and the egg and mix till smooth. In a separate bowl whisk together flour, baking powder, salt and cinnamon. Slowly beat the flour mixture into the wet mixture just until combined. Gently stir in the remaining ingredients. Scoop the dough into about 2 tbsp balls, flatten and bake for 15-20 minutes, keeping an eye on the bottoms as they tend to brown faster than the rest of the cookie. Store in an airtight container for up to a week (we ate them up in 3 days in our house). Makes about 15 cookies.
