A fun treat for sandwiches or dipping fruit is chocolate spread. Unlike commercial, store bought brands this recipe doesn't contain any artificial ingredients. My daughters love it when they find it in their lunchbox or we make to dip strawberries in! Plus cashews make the spread super creamy. ps. cashews are loaded with minerals like potassium, copper, iron, magnesium, zinc, and selenium.
Chocolate Cashew Spread
Ingredients:
2 cups raw Cashews
2 tbsp Coconut Oil
6 Dates (pitted)
1 tbsp unsweetened Cocoa
1 tbsp Honey
1/4 tsp pure Vanilla
pinch Nutmeg
Using a high powered blender (like a vitamin) or food processor pulse the cashews till you have a chunky powder. Add in the other ingredients and blend till you get the desired consistency. I like it a little chunky but the more you blend the smoother it will get. Store in an airtight container in the fridge.
