Happy New Year 2021! This is a healthy breakfast recipe perfect for a fresh new year (and it won't take much to make this year better than the last). These are all the deliciousness of homemade cinnamon rolls with a fraction of the effort. Plus they are the perfect Gluten-free and Dairy-free waffle (you can make these vegan by using flax eggs or egg replacer). Enjoy!
Cinnamon Roll Waffles
Ingredients:
1 cup Almond Flour
1 cup Oat Flour
1 tsp Baking Powder
1/3 cup Applesauce
1 tbsp Oil
1/4 cup Coconut or Almond Milk
1 tsp Vanilla
2 tsp Cinnamon
2 Eggs
1/4 cup + 1 tbsp Maple Syrup
1/2 cup Cream Cheese (I use Kite Hill Almond Milk Cream Cheese)
Whisk together flours and baking powder. Whisk in applesauce, oil, milk, vanilla, eggs and 1/4 cup maple syrup till smooth batter is formed. In a separate bowl whisk together cream cheese and 1 tbsp maple syrup till smooth, set a little aside to top waffles. Gently swirl the cream cheese mixture into your batter being sure not to mix in completely (you should still see the cream cheese swirls in the batter). Use batter to make waffles according to your waffle maker instructions (waffle makers vary A LOT so it's important you cook it according to your appliance). Serve warm topped with the maple cream cheese mixture, maple syrup and/ or jam!
