Coconut Peanut Butter or Sunflower Butter Cups


Here is an easy treat recipe that is perfect to make for a gift, party or just a random Tuesday! This recipe packs a tasty and healthy punch with protein, fiber, iron and zinc. It's a favorite in our house...


Coconut Peanut Butter or Sunflower Butter Cups

Ingredients:

3/4 Cup Creamy Peanut Butter (or Sunflower Seed Butter for a “nut-free” version) 1/4 unsweetened, shredded Coconut (plus extra for sprinkling on top) 2 tsp Honey 1 (10 oz) bag Chocolate Chips (I use Enjoy Life Chips for allergy friendly) 1/4 tsp nutmeg (optional)


Line a mini muffin tin with paper liners. Mix the peanut butter or sunflower butter, coconut and honey together until will combined and chill in the fridge.  Add the chocolate chips to a medium glass bowl with the nutmeg.  Microwave for 40 seconds on high then stir.  Repeat  6-7 times until chocolate is smooth and glossy.  Add 1 heaping teaspoon to each mini muffin cup.  Allow to set in the fridge for about 5 minutes.  Add 1 teaspoon of the peanut butter mixture on top of the hardened chocolate and smoosh with a spoon (my girls love this part).  Top with another heaping teaspoon of melted chocolate and sprinkle with coconut.  Set in the fridge for about 15 minutes. Store in the fridge in an airtight container.
