When I was a kid I remember getting so excited when dinner included rice because my mother would usually set some plain rice aside we could use for dessert. After dinner she would let us eat it like cereal with milk, cinnamon and sugar. Inspired by that I created this easy, healthy dessert. It makes a great snack or breakfast too!
Date and Rice Pudding
Ingredients:
1 1/2 cups Cooked Rice (plain)
4 Dates, pitted
1 tbsp Maple Syrup
1/4 tsp Nutmeg
1/4 tsp Cinnamon
1 cup Almond Milk
Puree all of the ingredients in a blender and pulse till combined but still coarse. Spoon into a ceramic or glass baking dish. Bake for 10 minutes at 350°f. Serve warm!
