This is my new FAVORITE granola recipe. I created it over the summer for a kid's cooking class and it quickly became my go-to homemade granola. We just made a big batch at my daughter's sixth birthday party over the weekend and it's already almost gone. That may have something to do with me eating it with a spoon straight from the container? My girls love sprinkling it on anything; yogurt, fruit, bananas with peanut butter...the possibilities are endless. Plus it's a great recipe to get kids involved in the kitchen.
Groovy Granola
Ingredients:
•1 tsp Nutmeg
•1/4 tsp Salt
•3 tbsp Coconut Oil, melted
•3 tbsp pure Maple Syrup
•1 tsp pure Vanilla
•2 cups Rolled Oats (I use Gluten-Free)
•1/2 cup Chia Seeds
•2/3 cup Pistachios
•1/4 cup Coconut (optional)
•1/3 cup dried Blueberries
•1/3 cup dried Cherries or Cranberries
Whisk together nutmeg, salt, coconut oil, maple syrup and vanilla together. In a separate
bowl combine oats, chia seeds, coconut, pistachios and dried fruit. Pour oil mixture over
oat mixture and stir well. Pour on to a medium sized pan. Cover with foil. Bake for about
20 minutes in a 350 degree oven. Remove foil and bake for an additional 5 minutes.
Allow to cool for 10 minutes before gobbling up eating. Store leftovers in an airtight
container.
