We had a wonderful Family Day for the Madison Mom's Blog this past weekend! It was a beautiful day and I was able to meet a lot of readers and their kids as well as share some of my healthy and fun treats. I have already had more than a few requests for the recipes. This snack mix recipe is one of my favorites, including all of the fruits the caterpillar eats through in Eric Carle's classic children's book {The Very Hungry Caterpillar}. Hungry Caterpillar Snack Mix
Ingredients:
4 cups Cereal, no or low sugar
1/4 cup dried Strawberries
1/4 cup dried Pears or Apples
1/4 cup dried Blueberries or dried Plums
1/2 cup Sunflower Seeds or Pumpkin Seeds
3 tbsp Coconut Oil (or other oil)
1 tbsp Orange Juice
3 tbsp unsweetened Applesauce
1 tsp Nutmeg
1 tsp pure Vanilla
Preheat oven to 350 degrees (f). Mix all of the dry ingredients together in a large bowl until well combined. Kids love this part!! Melt the coconut oil with the applesauce, nutmeg and vanilla and whisk. Pour over the dry ingredients and stir till all of the items have a glossy coat.
Place on parchment lined baking sheet(s), with the layer being no thicker than about an inch. Bake for 6 minutes, remove from oven and stir gently, bake for an additional 3-4 minutes. Allow to cool for 5-10 minutes before eating. Store in an airtight container for up to a week!
