This is an easy quiche that you can whip up quickly...no pie dough to knead, chill and roll out. The simple pretzel crust adds a salty crunch that is the perfect balance to this recipe. Makes a yummy breakfast, brunch or brinner!
Kale & Goat Cheese Quiche
Ingredients:
1 cup Pretzels, crushed
1 tbsp Butter, melted
5-6 Large Eggs
3/4 Cup Kale, Chopped
1 tbsp Chives, diced
1 tbsp Goat Cheese (or dairy-free cheese)
2 tsp fresh Basil, minced
2 tsp fresh Thyme, minced
1/2 tsp Salt
1/4 tsp Black Pepper
1/4 tsp Nutmeg
1/2 Lemon, zest & juice
1 tsp Hot Sauce (optional)
Preheat oven to 350°f. In a small bowl combine crushed pretzels and butter. Press mixture into a pie plate. Bake for 10 minutes. In a medium bowl whisk together eggs till frothy. Add kale, chives, cheese, herbs, lemon juice & zest, salt, pepper and nutmeg and whisk until well combined. Gently pour over the pretzel crust and return to oven. Bake for 25-30 minutes. Cool for 5-10 minutes before serving. Enjoy!
