Once you taste it you will have a hard time believing it doesn't contain butter or sugar because somehow it tastes so buttery and sweet!! Enjoy!
Maple Pecan Banana Bread
Ingredients:
3 RIPE Bananas
2 Eggs
2 tbsp Applesauce
1/2 cup + 1 tbsp Maple Syrup
1 tsp Vanilla
1 tsp Cinnamon
2 cups Almond Flour
1/2 cup Oat Flour (or other flour)
1 tsp Baking Powder
Pinch Salt
1/2 cup + 1 tbsp Pecans, chopped
Coconut Oil, for greasing pan
Preheat oven to 350°f. Slice one of the bananas lengthwise and set aside. Grease a loaf pan with coconut oil and line with parchment paper. In a medium mixing bowl mash two of the bananas till smooth. Whisk in eggs, applesauce, 1/2 cup maple syrup, vanilla and cinnamon till smooth. In a large mixing bowl whisk together flours, baking powder and salt. In a small mixing bowl combine 1 tbsp maple syrup and 1 tbsp pecans. Pour banana mixture into the flour mixture and stir till combined. Fold in 1/2 cup pecans. Pour into loaf pan and top with sliced banana and maple pecan mixture. Bake for 40-55 minutes. Serve warm!
