Raspberry Coconut Bars {no-bake}


This is an easy, healthy and allergy-friendly treat. It's bright color is matched only by it's fruity and sweet taste (in fact we dare you to eat just one).  Great for parties, snacks, lunch boxes and mores...


Raspberry Coconut Bars

Ingredients:

2 cups Coconut, unsweetened shredded

3/4 cup freeze-dried Raspberries

1/2 cup pure Maple Syrup

3 tbsp Coconut Oil

pinch Salt

1/8 tsp Nutmeg

1 tsp pure Vanilla


Add all of the ingredients to a food processor and blend till smooth (about 3-5 minutes).  Spread evenly on a parchment lined baking pan.  Set in the freezer for 30 minutes.  Cut into bars and store in an airtight container in the fridge or freezer.
