
One of the top viewed recipes here on Yummy Sprout is my Cinnamon Chia Pudding. It's velvety, creamy texture is fantastic. I think I may just have struck gold again with this recipe. Sweet, healthy, pink and so easy to make...what's not to love?
Very Berry Chia Pudding
Ingredients:
1/2 cup frozen Strawberries
1/2 cup fresh Raspberries
4 pitted Dates
2 tbsp Honey
1 can Coconut Milk (13.5 oz)
1 tsp. pure Vanilla
1/4 tsp Nutmeg
1/2 cup Chia Seed
Purée the berries, dates, coconut milk, vanilla and nutmeg until smooth and creamy (this make take a few minutes). Whisk the chia seed into the creamy, pink mixture. Refrigerate for at least 20 minutes (this gives the chia seed time to absorb the liquid and give it a pudding consistency). Top with fresh berries and almonds or sunflower seeds when serving. A perfect treat sweetened with dates and honey that is loaded with healthy fats and nutrients!
